Lemon Tart with lemon french custard


Lemon tart with mandarines, it's a season dessert by the French Pastry Chef Christophe Felder.
I love citrus fruits and his recipe sounded great ! Who doesn't have a few lemons and mandarines ?

This recipe comes from the book "Exquises pâtisseries pour les fêtes" of Christophe Felder
 There is a lot of amazing recipes in it, even some muffins :)
I did my own cookie dough and I flavored it, but I followed all his steps for the lemon cream.
My cookie dough is mandarine flavoured, with the zests and a bit of juice.
I divided all the proportions by half and did 2 medium tarts instead of a big one.


  Preparation   I tried to follow his instructions, but it got harder than it is supposed to be... I felt like I lost a lot of time. But there is no difficulty in the recipe. It lacked of details, but I'll explain it clearly on this post. Still, it took me about 1 hour to prepare... mainly because of the mandarines.

  Tasting   I've never been disappointed by Christophe's recipes ! That cream is absolutely delicious, though too buttery for some people. It's a fresh, rich and buttery cream... it's an all-season dessert actually. A lot of flavor with a hint of sugar... I really don't think I could find better, unless there is less butter in it ahah. For the mandarines, I'm not convinced, it seemed like a nice touch but it's not worth it !

  Conclusion   I keep the recipe, without the mandarines :)


For a 9 inch pie : serves 6 to 8

Christophe Felder gives a recipe for the cookie dough :
Same as mine but +2tbsp of butter and no zests. Softened butter mix everything with a wooden spoon.
Keep 1 hour in the fridge, then cook at 350°F for 15minutes. Turn out when cooled.

   You will need :   
For the cookie dough
1lb of cookie dough with :
2 mandarine's rinds, shredded finely
3tbsp of grounded almond
1/2 cup white sugar
- instead of 2/3 cup -

For the lemon custard
5 meyer lemon's rind, finely shredded
1 1/4 cup sugar (270gr)
3 sticks of butter (350gr)
- it hurts ! -
5 eggs
2 mandarines
1/3 powdered gelatin bag (0.07oz/2gr)


Turn the oven on at 325°F

Making the dough
Finely peel the mandarine's zests with a cheese grate. Chop them.
Add it to the flour with grounded almonds and sugar. Then follow the recipe of cookie dough.

Flatten it on 0.2 inch (5mm) and place it in your buttered mold. Press gently on the sides so it won't fall.
Put 20 minutes in the oven.
Turn out when cooled.

Prepare the custard

Prepare the gelatin by following the instructions on the package.

While your dough is cooking, peel coarsely your lemons to get the rinds.
They may be thick, it doesn't matter... do as peeling an apple.

Cut the butter in dices, set aside.
Press lemon juice in a saucepan, with zests, gelatin, sugar and eggs beaten, whisk.
Turn the stove on at low/medium heat while stirring.

After a "while" (15 to 20 minutes) the cream will thicken and start simmering.
Turn the stove off, add the diced butter and stir until homogeneous.
Use a strainer to pour in a bowl and remove the zests.
Once filtered, beat with an electric beater at medium speed for 1 minute.



Making the tart
Remove all the thin white skins from your mandarines.
- it takes a while ! -


Cut them in dices if too big. 
On your pre-cooked dough, Pour half of the custard, then the mandarines.
Keep the center of the tart without mandarines (circle of 2inches) so it will be beautiful when served. 
Pour the end of the custard, flatten it.


Decorate with a vanilla bean and a few mandarines... a rasperrie or whatever you have :)
Refrigerate 2 hours before serving !

The Soft Chocolate Tart of Antoine Zestermann


A new Chef Recipe... Let's have some chocolate !
 I had tried his Christmas cake with madarine "Bûche alsacienne aux clémentines confites" ... which was amazing, I wanted to try another recipe from Antoine Westermann
- The chef of our wedding's restaurant -
Antoine Westermann, in his book "La cuisine ménagère d'un grand chef" - Homecooking of a famous chef Antoine gives us a recipe of a soft chocolate tart with a topping made of ganache.... 
Really light of texture, it's almost a mousse. 
You have to keep the tart at room temperature to conserve its softness.


   Preparation    Easy and quick, you won't have a lot of dishes to wash :)
The recipe was well made but I 've missed a line... an important one : Pre-cook the dough !
I've also replace the cocoa buteer by regular butter so the icing-ganache may be a bit different in texture. You will also need a cooking thermometer... but if you don't have any, you can still manage it.
I could do better, but the chocolate cream was awesome !

   Tasting    Surprising taste on the first slice... The cream tastes like a chocolate cake ! Sweet and really soft... The icing is more than welcome, it's a really dark touche of bittersweet chocolate :) 
It was even better a day later The cram was even softer !

   To conclude    A soft, tender, with a "fondante" texture, which has satisfied everyone, dark chocolate lovers a much as milk chocolate lovers....
A real treat with a dark coffee !


For a 9inch pie
   You will need :   
1 cookie dough
- 350gr -

for the chocolate cream
3.4fl oz of milk (10cL)
3.4fl oz of half&half (10c)
2.5 of white sugar (70gr)
2.8 dark chocolate 70% (80gr)
5 egg yolks (2.8oz)

for the icing/ganache
3tbsp of half and half
4tsp of white sugar (20gr)
4 tsp of water
2.8 oz bittersweet chocolate (70gr
2tbsp softened butter

Prepare your cookie dough, flavour it with chocolate, vanilla or keep it natural.
Flatten it on 0.1inch (3mm) and place it in your tart pan, so it holds well on the edges.
Spread some beans or rice on the dough and put in the oven at 350°F for 15 minutes.

Let it cool down in the tart pan at room temperature.


Preheat your oven at 340°F

Prepare the chocolate batter
Coarsely chop the chocolate in a bowl
Put the eggyolks in a smal bowl and take a whisk.

Pour tje cream the milk and the sugar in a small saucepan at medium/high temperature.
Bring to a boil while stirring with your whisk to melt in the sugar.
Whisk in that cream on the chocolate and keep beating until well melted and integrated.
Add in the eggyolks and stir by hand with a spatula so the eggs won't be beaten or foamy.

Pour that chocolate batter in your tart and put it back in the oven for 15 minutes.
On the top, there will be a small crust but the inside will be really soft. Don't overcook !

Prepare the chocolate icing
Melt the sugar with the water and the chocolate woarsely chopped in a saucepan.
Bring to a boil at medium fire. At the first boil, add in the butter and the cream. Keep a gentle boil 20secondes. Pour in a bowl, let it cool down and keep refrigerated.
To use, heat it until you reach 100°F and pour it carefully on the chocolate tart.
OR
Instead of refrigerating it, wait 20 minutes or so at room temperature, to reach 100°F  
and the right consistency, then, pour it on the tart.

Keep the tart at room temperature !

All chocolate tart

This recipe makes a good use of pâte sablée ( Cookie dough ) with cocoa


Il vous faut :
- or a regular one, orange one, vanilla, coconut... :) -
14.1oz of chocolate between 60% and 70% (400gr)
6.7 fl oz. of milk (20cL)
6.7 fl oz. of light whipped cream (20cL)
2 eggs
10gr of Vanillla sugar
- or few drops of vanilla extract -

Turn the oven on at 300°F
Prepare a tart dish, put the flattened dough in it and use a fork to drill the dough
  (8 or 10 fork drill at equal distance from each other)
Put in the oven the dough for 15 minutes

Make water boil in a casserole or a steamer,
in a bowl, break the chocolate in squares, and verse the boiling water on it.
Leave it 4 to 5 minutes.
Put the milk and the cream to boil in another casserole.

Beat the eggs and the vanilla in a bowl and reserve in the fridge.

Remove the water from the chocolate by letting the water run slowly in the sink 
until there is 1spoon of water left 
- to keep as much chocolate as possible in the bowl - 
Add the warm cream and milk, mix it.
Once it's homogeneous, add the eggs and mix until the cream is smooth and shiny. 

Put the dough out of the oven (it must be 15 minutes) Verse all the chocolate cream in it.

Put it back in the oven for 30 minutes
Then let it get cooler and keep it in the fridge for a few hours.

Take out 10/15 minutes before eating :)
